to 'sacrifice oneself on the altar of Hymen' merely means a willingness to be married although in the context of this particular ad it also probably has the connotation that she is more than prepared to marry for money only.

One of my favourite Victorian expressions if a man wanted to express the opinion that a woman was 'hot' would be to say, 'I have great regard for her person.'
